I've never done this before . . .

but, I have been watching the cooking channels - as I have been sitting a lot these days. I want to cook and bake more so this has been fun. I thought I'd share some of my favorite Chatty Recipes.




This is from the Food Channel - the show is the McNeely's. They are a cute couple that 'cook' together.
Okay if I could eat anything I wanted - whenever I wanted - with no fear of gaining weight - I'd eat a piece for breakfast, lunch, and dinner daily. I can't do that. But what I can do is have A piece - and that's okay.



Peanut Butter Pie

Easy Serves:
8 servings
Ingredients:
Hot Fudge Sauce:
1/3 cup heavy cream
1/4 cup light brown sugar
1/4 cup light corn syrup
2 tablespoons unsweetened cocoa powder
1/8 teaspoon table salt
2 teaspoons vanilla extract
4 ounces semisweet chocolate, finely chopped

Peanut Butter Pie:
8 ounces cream cheese, at room temperature
3/4 cup confectioners' sugar, plus 2 tablespoons, divided
3/4 cup creamy peanut butter, at room temperature
1 cup heavy whipping cream, plus whipped cream, for garnish, optional
1 teaspoon vanilla extract
2 ounces shaved milk chocolate
Chopped peanuts, optional

Directions
1 (9-inch) baked chocolate cookie pie crust

Sauce: Add the cream, brown sugar, corn syrup, cocoa powder, salt, and vanilla extract to a heavy-bottomed saucepan over medium heat. Reduce the heat to a simmer and add the chopped chocolate. Stir continuously until the chocolate is melted and the sauce has thickened, roughly 3 to 4 minutes. Let the sauce cool for 10 minutes before serving.

Pie: In a large bowl combine the cream cheese, 3/4 cups confectioners' sugar and the peanut butter until the mixture is light and fluffy, about 3 minutes.

In a separate bowl, whip the heavy cream until thick and light. Add the remaining 2 tablespoons confectioners' sugar and vanilla extract. Continue to whip until stiff peaks form.

Carefully fold the whipped cream into the peanut butter mixture. Pour the batter into the pie shell, sprinkle with the shaved milk chocolate and freeze for 4 hours.

If desired, serve with the hot fudge sauce, whipped cream, and chopped peanuts.

Oh yum yum yum. I adore peanut butter pie. I have an addition to peanut butter anyhow. Seriously - I'll be blogging about it in the near future. At any rate, no pie anytime soon for me - I'm counting calories because I am just 2 pounds away from that pre-preggo weight and I really want to get back to it already!

Hey Sandie!

You can learn a lot watching those cooking shows! My favorites are Tyler Florence, Barefoot Contessa, Emeril, and Guy. Oh and let's not forget Paula Deen! I love Paula! And the Neely's make a lot of easy recipes too but not that peanut butter pie. I would buy that one at the store though! lol

I LOVE to watch cooking shows. I only have GPB and they show a little cooking on Satureday afternoon, but if I had the Food Network, it would be playing non-stop LOL

i like their cooking show also, they are darling together. i enjoy a bunch of cooking shows although i very very seldom try the recipes. that pie looks soooo yummy!

I've never heard of peanut butter pie. It sure sounds rich and delicious. Now if there was a low-cal recipe for it you'd really be in businness.

OMG, Sandie! I had to scroll because one, I am a peanut butter freak and two, well, I am a peanut butter freak. I am aware of this couple...... they make delish food, I want to see them eat it!!! I'm not an avid cook but love to watch the Cooking and Food Network-tmainly because of the host's personalities!
Ate at one of the Neely's Restaurants in Memphis and wasn't impressed with the food or service so I don't watch them!

Ooooh, I LOVE peanut-butter anything ... this looks really yummy and not terribly difficult. That last part's a "must" for me, since the kitchen and I aren't exactly bossom buddies.
