Monday's Recipe - along with a cookie exchange this weekend . . .



Okay the following cookies are my rejects - color off and too soft - but I had already bagged the others - no matter - they are to die for!




CHOCOLATE CHIP MINT COOKIES

Put 2 eggs out – separate and bring to room temperature.

Preheat over to 370 degrees and forget it… it must be on 15 minutes of longer

Ingredients:

2 egg whites at room temperature (NO YOLKS)

¾ cup granulated sugar

1 ½ cup mint chocolate chips – 1- 6 to 8 0z. Package

½ teaspoon cream of tartar

½ teaspoon vanilla

Dash of salt

Green food coloring

Directions:

Beat egg whites only until frothy/foamy.

Then add cream of tartar.

Continue beating and slowly add sugar during beating.

Add salt-beat until stiff (peak stage).

Add vanilla.

Add 6 drop of green food coloring.

Add chips and fold all together.

Drop by teaspoons on cookie sheet which has been greased.

Put cookie sheet in oven.

TURN OFF OVEN.

Let set at least 5 hours or overnight if possible.

Can be placed close together as they do not spread of change shape.

Saturday morning was a cookie exchange with Joyce Flour Power who doesn't blog anymore, Cheri an Atlanta Blogger, and my daughter> We attended it at Joyce's daughter Annie's house. She's a beautiful gal, a wonderful host, and has a lovely home.

Now these are in random order...

Cookies were set all the way around the kitchen.


This was the light breakfast they served us! It was delish.


Here is Joyce, Kelly, and Cheri


These were some of Annie's friends.


More cookies to share. We would go round and round and collect two every time we went around.


Joyce and Annie gave everyone a beautiful scarf in a goodie bag.


There was a complete hot chocolate bar. Anything you could want was there.

beautiful, the kitchen is beautiful too, (I love the color of those cabinettes) the mint cookies of your mums are so different, I think they are a must for me to try.

You asked about the red and white stripe ribbon on my blog. It came from Belk's many years ago after Christmas. I love it but have not been able to find anymore. The bows I'm using are getting pretty worn.

Those cookies sound delicious, Sandie! I bet they were a hit at that cookie exchange! I've never been to a cookie exchange, but I do hear they are fun and you can get cookies that perhaps you might not have made before. Looks like a lot of fun too at your exchange; food looked good and who can resist a cup of hot chocolate with a cookie? Glad you and your daughter could go and have fun (and bring home cookies to share with the rest of your family!)

Hi Sandie, I love cookie exchanges --when you can actually go home with not only the recipe but also some cookies!!!!! I don't care for them when they are JUST recipes... Obviously I like the cookies!!!! ha ha

Are scarves the "IN" thing this year??? So many people in that picture are wearing scarves... Guess this is the year for scarves... (I'm so out-of-touch!!!)

I don't care how weird those cookies look - anything with chocolate and mint in it is delicious by me (except maybe brussels sprouts...I told you I despise those little bundles).
