Mondays recipe and positive idea to start the week . . .

MY REDEEMER LIVES!

I'm BBBBBAAAACCCCKKKK!!!!!!! I've missed you all.
I'm glad to be home!
Went on a nice vacation and celebrated one grandson's 11th birthday in Myrtle Beach S.C. and went up to visit my other one in Cincinnati, Ohio the first weekend - so I put a lot of miles on this old body.

And we got to celebrate Easter! Which is really the best holiday of the year.


Let's face it - chicken is good for us - so I look constantly for chicken recipes. Here's a good one that is healthy for you too.

Crumbly Baked Chicken

From: Beat the Clock Chicken
Similar to fried, these chicken parts are coated with a zesty, flavorful crust. The good news is that they are just as delicious as fried, but with a fraction of the fat.

Ingredients
Serves: Prep: 15min Cook: 40min Total: 55min
Directions
  1. Preheat the oven to 400°F. Coat a baking pan with cooking spray.
  2. In a shallow bowl, combine the flour, crab-boil seasoning, and salt. In another bowl, beat the eggs. In a third shallow bowl, combine the cornflake crumbs and cheese.
  3. Dip the chicken in the flour mixture, shaking off the excess. Dip into the beaten eggs, then evenly coat with the crumb mixture. Arrange the chicken in the prepared pan.
  4. Bake for 40 minutes, or until a thermometer inserted in the thickest portion registers 170°F and the juices run clear.

That sounds like a great chicken recipe; I'm going to try it. Not sure about the crab broil seasoning, never heard of that, will see what hubby things about it and what he might want to substitute for it. Thanks for sharing!

You are not the first to mention "crab boil". It has to be a southern thing. I had to go on internet to know what it was. Is it in your grocery stores? Wish I could have fried chicken! I miss it from childhood.

I've made a chicken recipe very similar to that one.

I want to know how to make the Peeps too. They're adorable. I love the chocolate covered Peeps. The ones that are completely covered in chocolate. Have you tried them? There are some that just have the bottoms dipped, but I like the whole thing dipped. I meant to go out and look for them reduced after Easter, but never found the time.
