Monday Musing's


 

RECIPE OF THE WEEK and it is good and healthy for you to boot!

Servings: 4
Serving Size: 1/2 cup
Calories: 40
Fat: 0 g
Carbs: 8.5 g
Fiber: 1.9 g
Protein: 1 g
Old Points: 0 pts
Points+: 0 pts
Here are your ingredients:

1 (14.5 oz) can no-salt-added diced tomatoes
1 (4.25 oz) can green chilies
1/2 cup chopped red onion
2 cloves garlic, chopped
Juice of 1 lime (about 3 Tbsp)
1/2 jalapeno, seeds removed and chopped
1/4 cup cilantro leaves
1/4 tsp. salt
1/4 tsp. cumin

Place all ingredients in the bowl of your food processor.  Pulse until just combined for chunky salsa or pulse more for smoother salsa.  Store in an airtight container in the fridge until ready to enjoy!

Here is my barn for the week - I'm not sure I've seen a round barn before and I thought this was so unusual.  Have you seen a round one?  Again this is one in South Carolina - again as we are speeding by - lol.








It is going to be an unusual week here.  My daughter and grandson went to Florida for a few days and then on a four day cruise.  The house seems so quiet!  I’m going to do some catching up on things that are hard for me to do when they’re here!  Lets see – cleaning and throwing away junk, eating fresh fruits and veggies, watching my shows, stuff like that - lol.  It’s funny though when they are gone – I miss them.  I hope they’re having a good time!

Now you enjoy your time by yourself.. Its funny but when there is so much to do, we would like a break and then when it comes, we don't know what to do...

Oops, Sandie. You should be on that cruise! Mrs. Jim and I took a 1980 Mediteranian cruise from Athens to Haifu (Israel), stopping at Ephesus, Patmos, Rhoades, and Aleandria (Egypt) which then we went on a bus trip to Cairo to see the Pyramids and ride a camel.

We then stayed seven nights in Jerusalem and two in Amon (Jordan).

We invited Mom and Dad, thinking they would go with us. We knew that Mrs. Jim's mom, 'Mother,' wouldn't go. Guesse who traveled with us? Mother. It was her first plane trip, second (after Mexico) trip out of the U.S. She really enjoyed the trip and loved to talk about the Holy Land with her friends.

I love your barns, Sandie! Yes, I have seen one round barn, a really pretty-painted-white barn, in Uehling, Nebraska. That was about ten miles from my birth and growing up home.

That looks like a terrific recipe. Hope your daughter and grandson have a great trip and good weather. My husband and son are in Syracuse for the day and night getting the rest of my son's stuff so he can move back in here and look for a job. I like doing what I want, when I want, but I miss them, too.

We have some round barns around here. Peculiar things. But I understand they're very practical even if they seem a bit impractical to build.

Glad your daughter and her son are gone. For your sake. I'm sure they'll come back exhausted, and have stories to tell. You, on the other hand, will be well rested. Hopefully.

Loved the recipe. That's easy enough for a Bear to make. I'll do mine without the chillies, jalapeño, salt and cilantro (because I don't like spicy food). Though I might ad pepper, as the French say, "Chacun a son goût."

No, I don't think I've ever seen a round barn before. Make you wonder how come. Glad your daughter and her son could get a way for some vacation time. I hope they have a great time. Just about the time you get used to them being gone, they'll be home again. I've lived by myself for many years now and it's the opposite for me...when anyone comes to visit I'm just getting used to them being there and then it's time for them to leave again. I hope your Monday is off to a great start!

I think the barn is a tobacco barn, used earlier to cure tobacco.

Ahhh now, that is a memory 'kicker inner', ha!. If you are happy and you know it clap your hands. Part of a song we sang in SS and Children's church.

The salsa looks good. I've bought some before because I was hungry for it but I always end up throwing it away. I get a craving for it and then I'm just not in the mood for it again :)

I just traveled all the way through SC but I didn't see the round barn! heehee! But I saw a couple I wish I had time to take a photo of! When I was sick with a cold, I got hungry for chili and my hubby made some! Tastes good and it's good for you!

Hi Sandie, Glad your daughter and her son got away for a nice vacation. Sounds wonderful!!!! You DO need a break every once in awhile too... AND -they need mother/son time --so this is GOOD...

Hope you get to see your own shows, eat your own foods, etc... Forget the cleaning though.. That can wait! ha

Neat barn... I've never seen on quite like that...

Not sure hubby would eat that salsa or soup or whatever it is... He will NOT eat jalapenos, and I'm not crazy about them... BUT--I'd love it on top of some baked chicken....

I have only seen the round barns in photos, I think they are fascinating.

The salsa recipe sounds delicious. In the summer I like to substitute fresh tomatoes mostly because I always have so many tomatoes.
