Thursday Health and Wellness

Okay let's look at some health and wellness ideas today.  Grandma Bonnie had a recipe that I wanted to share with you.

Gluten Free Any Berry Pie With Graham Flavored Crust

Recipe:

Pie Crust
1 & 1/2  cups Almond Meal Flour 
1/2 cup Coconut sugar or Brown sugar
1/4 stick butter softened
2 tablespoons coconut oil
1/2 tsp cinnamon 
1/4 tsp salt

Mix all the above ingredients in a medium bowl. Mix the dough by hand until the all ingredients are blended together. Press the dough into a 9 inch pie plate. Refrigerate until the filling is ready.


Pie Filling
3-4 cups of berries cleaned
1/2 cup water
Sweetener of your choice (I used pure cane sugar)
1 & 1/2 tsp Arrowroot flour or corn starch
1 tablespoon fresh squeezed lemon juice

Place clean berries in a sauce pan with water, lemon juice and sweetener. I added 1/4 cup of sugar as the berries I used were not tart or sour. If your berries are sour or tart use more sugar to your taste. Bring the berries to a boil then turn down to a simmer. Stirring constantly. Mix arrowroot flour or corn starch to an 1/8 cup water mix well. When berries are softened add the arrowroot water slowly to the simmering berries. Stir constantly until the juices start to thicken.  Remove from heat let cool for a few minutes. Pour into prepared pie crust. Chill and serve. 


This is a gluten free crust that taste a little like a graham cracker crust. It can be altered to fit a paleo or vegan diet. 

Now I have been making a collection of gluten free recipes - when the kids go back to school I plan on doing some healthy baking - they just can't see me make it - lol.

And now a positive little thought - 

As I've aged, I've become kinder to myself, and less critical of myself.
I've become my own friend.
I have seen too many dear friends leave this world, too soon; before they understood the great freedom that comes with aging.
Whose business is it, if I choose to read, or play, on the computer, until 4 AM, or sleep until noon? I will dance with myself to those wonderful tunes of the 50, 60 &70's, and if I, at the same time, wish to weep over a lost love, I will.
I will walk the beach, in a swim suit that is stretched over a bulging body, and will dive into the waves, with abandon, if I choose to, despite the pitying glances from the jet set. They, too, will get old.
I know I am sometimes forgetful. But there again, some of life is just as well forgotten. And, I eventually remember the important things.
Sure, over the years, my heart has been broken. How can your heart not break, when you lose a loved one, or when a child suffers, or even when somebody's beloved pet gets hit by a car? But, broken hearts are what give us strength, and understanding, and compassion. A heart never broken is pristine and sterile, and will never know the joy of being imperfect.
I am so blessed to have lived long enough to have my hair turning gray, and to have my youthful laughs be forever etched into deep grooves on my face. So many have never laughed, and so many have died before their hair could turn silver.
As you get older, it is easier to be positive. You care less about what other people think. I don't  question myself anymore. I've even earned the right to be wrong.
So, to answer your question, I like being old. It has set me free. I like the person I have become. I am not going to live forever, but while I am still here, I will not waste time lamenting  what could have been, or worrying about what will be. And I shall eat dessert every single day (if I feel like it).

My problem with most recipes people post on Blogger and Facebook is that I never have most of the stuff in my kitchen, and when I go to the grocery, I don't remember what I don't have! LOL I am fine with a regular graham cracker crust, and feel blessed that we are not allergic to wheat.

I like getting older too while I still have my health I am enjoying it, you don't have to impress anyone and if you do something strange everyone just thing you are a mad old woman so they do cross you and that gives the freedom to do what you like.
The best part is not working, I never had time to paint or garden or just sit and watch the world go by, I do now.

Hi Sandie, Loved the part you wrote about yourself. I SO agree. I love being my age --even though we do get aches and pains and wrinkles and gobble gobble necks, etc.......

I have accepted myself and am not nearly as critical of others --or as judgmental.... Life is GOOD...

Now I need to google paleo diet because I don't know what that is.
I thought the recipe looked really good and would try it. I need a graham cracker crust for a tea this weekend, but I'm not going to try it out for that. I don't dare fail when I have to serve to strangers, if you know what I mean.
