Thursday's Health And Wellness

Swimming with the Manatees in Mexico.

The mamatee kissed him too!

RECIPE

I don't remember where I got this, stole this, but it sound good to me.

"Lemon Poppyseed Muffin in a Mug Recipe:

(This is a great, quick protein snack or dessert)

Spray a mug with non-stick cooking spray.
Whisk 1 egg into that mug.
Add 2 T. almond flour (you can grind your own almonds)
Add 2 T. milled flax seed (you can grand your own flax seed too)
Add 1 t. butter
Add
1/2 t. poppyseeds
Add juice and pulp of 1/2 lemon
Add 1/8 t. lemon extract
Add 2 g. (2 packets) raw Stevia powder
Add 1/2 t. baking powder
Dash of salt

Whisk all this together in the mug.
Microwave on high for 1 minute 25 seconds.
Turn muffin out onto a plate and let cool a bit before eating.

I tried this without the butter and then with the butter. The butter helps immensely, making it nice moist muffin with that great lemony taste!

Nutritional breakdown:

Egg:                 9 g. protein, 70 calories
Flax:                3 g. protein, 3 g. dietary fiber, 60 calories, 0 net carbohydrate
Almond Fl.     3 g. protein, 3 g. dietary fiber, 80 calories, 0 net carbohydrate
Lemon juice    1 g. net carbohydrate
Butter             34 calories, 0 carbohydrate
Poppyseeds     so little it doesn't matter, but it does matter a lot to the taste and texture

TOTAL           15 g. protein, 6 g. dietary fiber, 252 calories"

That's a lot of calories for a muffin. Wow.

Loved the laugh and yes they are helping.

Have a terrific day. ☺

love the plumber's assistants!

Well they are trying to help! He probably needs that weight to keep him from sliding out from under the cabinet! Have a great day Sandie!

Wow, this MUST have been his favorite thing to do! And something about these pictures of him...do you notice it? He is looking more like a young man and not as young...wonder if it is the no glasses, I don't know. I have a few pictures of Anne Marie that she looks way older than she really is. And in those pictures you can almost see what she will look like as an adult. I sense the same here with your grandson.

I would make that muffin for breakfast...except I don't use my microwave...I've not done so for about 8 years...it sits out in the back room with a stack of pencil-filled jars sitting on it. Graphite, water-colour pencils and coloured pencils.

A very tempting recipe, however!

what an experience, amazing, he will never forget this!
I tied a muffin in the cup, made with coconut flour and I didn't like it, maybe this one would be better,

I'd say this is one vacation your grandson is always going to remember. Not everyone gets a kiss from a Manatee. Hope your Thursday has been a good one...Not over yet but it is evening as I post this.

Love the read and also that is great the swimming with the manatees. I would scrunch up a little if it had been sharks!

What a great statement in your 'Lift', sooooo true.
Hugs from near Dayton, Ohio.

THIS IS AWESOME!!!!!!!!!!!!!!!

I remember walking along the inlet once and seeing a manatee approaching. Everyone who saw it, myself included, starting walking along the boardwalk next to it until we couldn't see him anymore. It was awesome just seeing that, I can't even imagine how awesome it must have been being right there with it. :) Very cool pic/memories. :)
