Monday - You are beautiful -

Good Morning!

This is something we all need to tell ourselves every day. We are beautiful - because God doesn't make any junk!


ITALIAN SAUSAGE TORTELLINI SOUP -(from my dear friend Jean)

1 pound sweet Italian ground sausage (I used about 3/4 pound, but you can add more....am saving 1/4 # for egg casserole:)
1 c. chopped yellow onion
2 cloves garlic or 2 tsp. chopped fresh garlic that you can buy in the jar
5 small cans of chicken broth (low fat)
1 c. water with dissolved chicken boullion cube
1/2 c. red wine ( optional...I didn't have any)
1/2 - 3/4 bag torn in half fresh spinach (but can use 1/2 pkg. defrosted spinach)
1/2 tsp. dried basil
1/2 tsp. dried oregano
2 cans stewed tomatoes
1 c. thinly sliced carrots (I like to do them on the diagonal)
8 oz. cheese tortellini (comes frozen)
1/2 green bell pepper (you can use the whole one if you'd like...John isn't a big fan of green peppers, but he loved this soup with just 1/2 of one)
Grated fresh parmesan for topping (optional, but nice touch:)

1. Place sausage in large pot over med heat and saute til well browned Drain and pat off grease really well. Keep a little grease in pan. Saute onions, green pepper and garlic for about 5 minutes in a little grease left in pan.

2. Add beef stock, chicken boullion dissolved in water, wine, tomatoes, carrots, spinach, basil, and oregano. Bring to a boil, reduce heat to low and simmer for 30 min, skimming any fat that my surface.

3. Add tortellini and simmer for 10 min. or til tortellini is fully cooked. Pour into indiv. bowls and garnish with the cheese or serve cheese on side.

Nice accompaniments are garlic bread and salad....Enjoy! :)

P.S. In case you don't like spinach you can substitute chopped zucchini. I love spinach and liked the nice deep green color, as well. Personal choice there.:)

I am going to go buy the ingredients this week - her recipes never fail me.

Hi Sandie. What a great post to start the week off with. Love your new header, and that thought for the day is awesome. Random kindness is what the world certainly needs, and something that I very much try to practice as I go through life. You're telling us we're beautiful, and have thrown in a good recipe for good measure. What more could we want in a post??!!

Love that thought. I don't know about turning my life around, but I've definitely had days when an unexpected touch or hug or kind word made all the difference. I'm definitely with you on committing an act of kindness. :)

That soup sounds delicious. I wish I hadn't promised myself I'd work on more healthy meals in 2012. I guess I could substitute the Italian sausage with some turkey sausage, but I don't think it would be the same. You mustn't tempt me like this. :)

I sometimes think random acts of kindness are really just common courtesy. If you are in line at the grocery store with a full cart and the guy behind you has just loaf of bread, letting him go ahead makes sense to me. This comes to mind because it happens to me at least half the time I go shopping. I tell people to go ahead. One time I let 3 people go ahead of me. Then I wondered if I was taking it to a whole new level. Ha! Kindness or courtesy? hmmmmm???

mine will have to be a kind act to hubby or the dogs since i am not going out. maybe tomorrow. i did one not to long ago that made me feel good. a woman stopped to ask directions to the place to get an MRI, she was german, could hardly speak English and could not understand my directions. i said follow me and i will take you there, i did and she did and we were both happy

I agree we need to tell ourselves everyday we are beautiful. Something I personally struggle with.

I love the thought for the day you've shared. Thank you! It was just this morning, that a stranger greeted me with the words "Good day" and it really made me smile and lift my spirit. Usually the place is full of people trying to get from one place to another, hustle and bustle - so this lady made my morning shine bright.

Thank you for this beautiful post. I had a situation recently where someone treated me in a very ugly way. Now I will remember that God makes no junk and that person was terribly wrong about me. I am a child of His and wonderfully and beautifully made. So what does it matter if someone wants to be mean? I really do thank you for helping me feel beautiful again. You are truly beautiful for letting your faith be seen on this blog which reached me when I needed it.

Hey Sandie~ this really hit home for me. This year I'd like to incorporate posts about recognizing our beauty when age and wrinkles try to convince us differently. Through the years I've dabbled in makeup artistry and adore fashion, but fitting it into our demographic can be a bit challenging for some. Especially when when the years have added a little fluff around our midriffs.
