Good Morning - Happy Monday to you!

A lot of you asked about the brussel sprouts recipe - I don't like brussels sprouts to be honest with you - but I loved Jenn's. So don't be afraid to try them! Delicious!

OK, here's the recipe for the brussels sprouts:



Roasted Brussels Sprouts with Balsamic Vinegar and Pancetta
From Bon Appetit

8-10 servings

2 tablespoons olive oil
2 lbs brussels sprouts, trimmed, halved
6 oz thinly sliced pancetta, chopped (ok to substitute bacon)
2 garlic cloves, finely chopped
3 tablespoons balsamic vinegar
1 tablespoon chopped fresh thyme

Preheat oven to 450 degrees.
Brush heavy large rimmed baking sheet with 1 tablespoon olive oil.
Place 1 tablespoon oil in large bowl; mix in brussels sprouts, pancetta, and garlic.
Sprinkle with kosher salt and pepper.
Spread mixture in single layer on prepared sheet.
Roast until brussels sprouts are tender and brown, stirring often, about 20 minutes.
(Can be made 3 hours ahead. Let stand at room temperature.)

Drizzle brussels sprouts with vinegar; sprinkle with thyme.
Stir to coat. Return to 450 degree oven; roast until heated through, about 5 minutes.
Transfer to bowl;
Serve.

The other thing friends asked for - I explained her dressing - she went to a site that allowed you to pick what you want in your dressing and they will tell you how much of everything to use.

It was a great site - because they don't only make dressing the way you want - there is a lot more!

Oh yummmy... I roast my brussel sprouts like this only I leave out the bacon, vinegar, onions and thyme. I like to taste just the vegetable...

Oh Yummy.......that looks so good...
Do you know how to cook beans Italian style?
one cup water
lots of green beans
one small choped onion
clove garlic
large spoon of tomato paste
quarter cup olive oil.
salt and peper to taste
bring to boil in sausepan, turn down to simmer for about 20mins.
Yummy served hot
or cold in a salad.

An emu chased my son all around a park one day trying to eat his potato chips, I had to take the bag off my crying/terrified son and give it to the emu to stop it! We laugh about it now that Peter is 43.

I can't do Brussel Sprouts (do they still sell Brussel Sprouts? I thought they'd been phased out or outlawed or something. Maybe I was just hoping it was so.

I still love your recipe though. I think someone should embrace the "less loved vegetables" and attempt to bring them around.
