Mondays recipe and positive idea to start the week . . .


Cook This: Apple Crumble From Eat This, not that - low calorie recipe.

Not only do the oats and almonds give this dish a shot of fiber, flour-based crumble, the crunchy texture of the topping makes for a more rewarding contrast to the soft cooked apples

Though "as American as apple crumble" might not have the same ring to it, it does have the same spirit behind it. These individuals dishes of tart, sweet roasted apples and crunchy cobbler topping make for a deeply satisfying end to a meal. What makes this one so special is the topping: Not only do the oats and almonds give this dish a shot of fiber, flour-based crumble, the crunchy texture of the topping makes for a more rewarding contrast to the soft cooked apples.

You'll Need:
2 Granny Smith apples, peeled, cored, and cut into wedges
1/2 cup apple juice
4 Tbsp brown sugar
1/4 tsp cinnamon
1/4 tsp nutmeg
1 cup rolled oats
Pinch salt
2 Tbsp chilled butter, cut into small pieces
1/4 cup chopped almonds
Whipped cream or creme fraiche

How to Make It:
*Preheat the oven to 400F. Combine the apples, apple juice, 2 tablespoons brown sugar, 1/8 teaspoon cinnamon, and 1/8 tablespoon nutmeg in a large mixing bowl.

*In a separate bowl, combine the oats with the remaining 2 tablespoons brown sugar, 1/8 teaspoon cinnamon, and 1/8 teaspoon nutmeg, plus a good pinch of salt. Add the butter and work the mixture with your fingertips until it comes together in moist clumps. Add the almonds and work them in as well.

THOUGHT FOR THE DAY:

Well, I guess you can go somewhere with a bad attitude - but you sure won't have any fun with one.

Just to update you on the grandson's school. We went to his public school last Thursday. It was beautiful. Beautiful and BIG! 400 just in 6th grade and 35 to a classroom. Seven period changes.

On Friday he went and shadowed at a Baptist school - a couple blocks away. I don't know why we didn't look at that one. GUESS WHAT - HE likes it - which is important to us. It wasn't as expensive as some. The kids looked nice. He said the teachers were nice. He shadowed 6th grade. He said the lunches looked good. I mean he liked it. It is accredited to GA standards. SO this is what we need - TO GET IN! My daughter is filling out the application and I am going to bring it in. I ask if you don't mind to say a quick prayer and just ask for God's will be done. THANK YOU!

i just said a prayer about the school, and I hope this is The One. the recipe looks wonderful, mother used to make it but did not put oats on it, sounds delish and healthy. if i am ignoring calories my favorite dessert is anything chocolate, from pie to cake to cookies. i love love Oreos.

4. Praying for the school situation- and glad for the update. 6th grade is so ... transitional. My daughter is in 6th grade and I am so grateful for her school. It is ND Christian which is wonderful. I lead a Moms In Prayer group there, and am thankful for moms who pray for the school, staff and children each week. Our kids and schools need praying Moms and Grandmoms whether Christian or not, for sure. I hope and pray your GS will be able to be at God's perfect choice for him...and make that way clear and provided for- In His Name. Love and Thanks, Dawn

Hi Sandie....With all the prayers being sent up for GS, there is NO DOUBT he will end up exactly where he's supposed to be. Remember, "DO NOT BE ANXIOUS ABOUT ANYTHNG."

I love Apple Crumble, but I especially love it with vanilla ice cream which sorta negates the fact that it's somewhat low in calories. Bummer!

My Mom used to make the best Apple Crisp ever, but I haven't had any in years. I still think it is one of my favorite dessert.

My heart did that little "quickening" thing when I read about the school that you hadn't even looked at before. We've been praying for God to send you to the exact school for him. Maybe this is the one!!
