Monday Musings






A barn somewhat hidden way behind all the vegetation.That was all I could come up with today.




Okay you ready for a recipe?  I am on a veggie quest.  We made them and they were delish.

Another veggie one from Pinterest - I LOVE PINTEREST!  I actually am grateful for it.



Easy Stuffed Mushrooms


Yield: 24 appetizers
Prep Time: 25 min
Cook Time: 45 min

Ingredients:

1 lb white button mushrooms
1 (10-ounce) tube Jimmy Dean Pork Light Sausage (or 10 ounces of any sausage)
sprigs of Italian Parsley for garnish, optional

Directions:

1. Clean mushrooms. Pat dry and gently pull off stems. Cut rough ends off of the stems & then chop the rest of the stems finely. With a small spoon, gently scoop out centers of mushrooms.
2. In a medium bowl, mix chopped stems and mushroom meat from the centers with the sausage. Fill mushrooms with a spoonful of sausage mixture. It's okay to mound up the sausage slightly since it will tend to shrink down when cooked.
2. Arrange in glass baking dish with 3 tablespoons water in the bottom of the dish.
3. Bake, uncovered, at 350 degrees for 45 minutes.
4. Top each mushroom with a tiny sprig of Italian parsley (if using) and serve immediately.

Neither of my girls like mushrooms, but the husband loves them and I rarely fix them. I think he would absolutely love this.

I am addicted to barns. If you find anymore post them. When I was a kid. I see barns all my life. Even my sister had a farm. As I never ever thought back then as Barns anything. Took them for granted. So now I look to take pictures myself now.
Oh how cute are this mailboxes.

I want a stuffed mushroom now. Except the only one that'll do is my Dad's stuffed mushrooms that he makes at holidays. He uses FRESH, from the butcher shop sausage and since eating his..no other one will ever come close. :(

I love, love stuffed 'shrooms ... but haven't had them in years -- only on account of (and this will sound soooo lame), the only recipe I had called for crab meat and I've developed a shell-fish allergy a few years ago.
