Mondays recipe and positive start to the week . . .

Good Monday morning to you - hope you all had a great weekend. Why do they always go so fast?


THIS IS A WEIGHT WATCHERS RECIPE:

Crusted Honey Mustard Chicken

Prep time: 12 min
Cook time: 15 min
Serves: 4

We added a twist to these baked, not fried;chicken breasts by coating them with honey mustard before dipping them into cereal crumbs. So crisp, so tasty, so good.

Ingredients:

1 spray(s) cooking spray
2/3 cup(s) lite honey mustard dressing
1/8 tsp table salt
1/8 tsp black pepper
2 tsp dill, freshly chopped
1 medium uncooked scallion(s), finely sliced
1 cup(s) cornflake crumbs
1 pound(s) uncooked boneless skinless chicken breast(s), four 4 oz pieces

Instructions:

Preheat oven to 425°F. Coat a shallow pan with cooking spray.

In a small bowl, combine honey mustard dressing, salt, pepper, dill and scallions; remove 1/3 cup and set aside.

Place cornflake crumbs in a shallow bowl. Dip chicken into dressing mixture and then cornflake crumbs; place in prepared pan.

Bake until chicken is golden and no longer pink in center, about 15 minutes.

Drizzle remaining dressing mixture (the 1/3 cup that was set aside) over chicken breasts and serve. Yields 1 piece of chicken and about 1 1/3 tablespoons of dressing per serving.

Doesn't this look delicious - kind of a different spin on chicken.

16 points, wow, that is more than half the points that I can have a day. However, if I just do a grape and apple day, that could be doable. It sure looks yummy, and therein lies the problem. Will I be able to stop at just one serving? Then there is my Gummy Bear addiction - I HAVE TO HAVE MY GUMMY BEAR SNACK. Oh my, I think that day could be a 40 pointer. I am feeling guilty just talking about it.

I'm answering your question about Atlanta on my blog. Right before we moved into our new house in PA, hubby was on active duty stationed in Ft. Dix, NJ. He received orders to go to Atlanta for 6 months to work with First Army. He packed up and left and the kids and I stayed here and waited for the house to be complete and get them enrolled in the new school, etc. He would fly home every few weeks for a few days and at the end of his 6 month tour, he received another set of orders for another 6 months, until he was there for 2 years and finally was able to get orders to come back to NJ. He would come home on weekends, about a 3 hour drive. The two years he was in Atlanta, the kids and I would join him for the entire 3 month break from school. We had a wonderful time. We thought of moving down there to be with him, but the Army kept reassuring him they only needed him for 6 months. And we believed them! :)

Gyro's are the best. I can't wait to visit my dad in Florida and have one in Tarpon Springs. They have some of the best! Since I am doing low carb I will only be eating the meat but that's okay.

That looks delicious!!! yummy. Funny about the writing on the wall in the picture. It reminds me of the first time I visited my neighbors. My house is full of energy. My living room is a mustard yellow and my dining room an avocado green and my kitchen is a bright green, almost florescent. My house just screams when you walk in the door, including the furniture all standing upright to greet you with a LOUD HELLO. There is no mistake, once you walk in, you're expected to speak in a LOUD VOICE. So, in contrast, when I walked into my neighbor's house, I found myself having to whisper. They are an older couple in their 80's and the colors in their home are pale pink and light beige. Up until then, I hadn't realized how "energetic" my house was and the photo you posted reminded me of that.

BTW, I have a gift for you. Can you please email me your address, I don't have it in my address book.

So THAT is what Mediterranean food is. I like those things too, but rarely get a chance to eat them. I really love lamb, too, but it is SO EXPENSIVE around here!
