Something I am sharing from Blondee's Diary - with her permission."Going grain and sugar free last summer was a big change. One of the hardest things to give up was Mrs. Field's cookie cups when we went to the mall. I finally came up with a substitute that I think not only compares, but surpasses the originals! I made these for the girly's birthday party this year, they were a huge hit."
Ingredients
2 sticks softened butter
2 large eggs
1/2 cup sugar free vanilla whey powder (I use Biochem brand)
2 cups blanched almond flour
1 Tbsp baking powder
2 tsp vanilla
1 bag Hershey's sugar free chocolate chips
1/2 cup Truvia (do not use the baking blend)
Preheat oven to 325. In a large bowl, cream butter, Truvia and vanilla. Add eggs one at a time, incorporate each one completely. Add almond flour, baking powder and protein powder all at once. Stir in chocolate chips. Spoon dough into a greased muffin pan, pressing down on each slightly. I fill them 3/4 of the way full. Bake in 325 oven for 12-14 minutes or until they turn golden brown on top. Remove from oven and allow to cool completely in pan. (This allows them to firm up.) To remove from pan, gently turn each cookie cup to loosen, then invert pan.
Frosting
1 stick softened butter
1 brick softened cream cheese
1/4 c. Truvia
1 tsp vanilla
food colorings of your choice
Cream butter, cream cheese, Truvia, vanilla and coloring together. Place in piping bag and swirl on each cookie cup. Refrigerate to store.
Of course I will be using NuNaturals - not truvia!!! lol |

Those look GREAT!! I don't make myself many baked treat any longer. I usually just grab a fruit of some sort to satisfy my sugar craving... but when I do have that craving, it is NuNaturals I use.
I love the 12 things happy people do differently- so very true!
I recently downloaded Jack Darnell's new book to my Kindle Fire. It tooks seconds to do.
I'm a Vegan so for the most part, there is only fruit and veggies on my diet. No meat, no dairy. I hated it at first but I feel so much better without all the toxins.
Don't get me wrong, I have cheated once or twice and didn't like the way I felt afterwards. Your body gets used to being healthy by not eating fat and sugar.
I put NuNatural flavored drops in my coffee this morning. :)
I'd love to try the NuNatural! I'm going to look for it. Love the laugh!
Some beautiful little birthday cakees from Blondee's site.
Oh thanks for the book plug... Great read today. It looks like things will work out on; my end for the Festival here in Belmont.
Love ya lady, always a good visit here at the Chatty Crone's spot.(HUGS)
You are so nice with these give a ways. I am passing for now, but I just wanted to stop and say HI!
I love the laugh and the lift. Right on the money. Now where is that chocolate.
Have a fantastic day. ☺
I love the 12 Things... and think they work!!
Your aqua color theme is so nice too.
Well, I just had to grab the happy people thing and save it! Hope you have a great weekend, Sandie!!
I love Janie, and I love you, too.
Cupcakes look yummy!
XO,
Sheila
Sounds like my diet--flour free and sugar free. I do try but it's very difficult--especially living in a convent of 5 or 6 people where we take turns cooking. Plus sometimes the craving for something sweet is overwhelming!
Thanks for the recipe! Need to try this!
hughugs
lots of happiness here today and yumminess!
Those cupcakes look great ! Just need a glass of milk lol !
I'm working on the 12 things...
Look look yummy....can't wait for you to make them!
I love your blog, and I LOVE your list of 12 things happy people do differently. My set point is always to be optimistic. It just feels better, doesn't it?
Cheers,
Jo
Liked the list of twelve things. And the recipe looked scrumptious.
Thanks for the recipe. I would also use the NuNaturals. I will be able to make this recipe for my grandson he is not able to eat wheat so we always substitute almond flour.
Well those cupcakes sure look good. I don't know if I could ever go sugar free though. I'm like the mouse and use chocolate mouth wash
Did I already ask for you to put my name in the hat?
If not, Sandie, please.
I guess I would use NuNaturals to try and cut down , or out, on sugar.
Take care.
Loved all the good information in your post today. Especially the one about happy people. Susan
I need to go wash my mouth out!
NuNaturals, I think that's what my daughter uses...I can use all the help I can win...so yes, I'm in.
I think I'd try them in my tea as well as baking. hmmmm I may have to quit chocolates? Nah!
Jacks books are great...you will love them.
BlessYa
This is confirmation to me that you are a happy person because the list is how I would describe you. I would wash my mouth with chocolate any day....:)
Those sound yummy and low carb!!
I'm a very happy person as you know but I still hate my two older brothers....so I agree with all 11 things on the list :)
I like that saying "never let anyone dull your sparkle". Girl you are one of the sparklest ladies I've ever met.
They are so pretty!
I love the chocolate quote!
I have been toying with going gluten and sugar free for awhile now to see how it improves my help. What would I do if I won? Well, I'd have to make those cupcakes, of course and kick off my new lifestyle with a bang!
Love the ways listed how positive people act and react. I strive for that, but often fail. But I keep trying! Ann
Thanks for the shout out!
Yes, please, Miss Chatty, please enter me in your give -away. I have been kind of out of things... and haven't been paying attention but I know we would use it. You see, Jim has diabetes. His family all have it. We are very careful and are always tying to follow the best medical advice that we can. We use Splenda now. But he really does not like it. I would like to try this NuNaturals. I did not hear where it can be purchased. Did you mention that? This is interesting, Miss Chatty. It is always good to hear of something new. Thank you.
Susannah
I love the 12 things happy people do. :) I saved it!
I didn't realize you went grain and sugar free. I bet it has been a challenge. It would be for me!
hugs,
Marie
They look SO yummy:) Have a blessed weekend dear friend, HUGS!
Pinning that recipe. I'll probably go to the original source since that's what "they" say I ought to do. If I can't locate it, I'll copy from here.
