Spiced Chocolate popcorn crunch


From All Recipes

Why did I pick this recipe?  It's a cute healthy snack.  And it is the 'new thing' to put a little spice in food.  And dark chocolate is good for you - so is popcorn!

Now you do have to make a couple exchanges here if you are diabetic.

The chocolate - get the sugar free chocolate to melt.  And then use a sugar substitute if you want for both the corn syrup**  and brown sugar.

Cute gift favors too.

8 cups popped popcorn
1/2 cup dry-roasted lightly salted peanuts
3/4 cup packed light brown sugar  - or use sugar substitute
3 tablespoons butter
2 tablespoons light corn syrup  - see below**
1/4 tsp. baking soda
1/2 cup semisweet chocolate chips - there are sugar free ones from Walmart
1/4 tsp. cayenne pepper
1/4 tsp. cinnamon

1. preheat oven to 300 degrees.
Line a large rimmed baking sheet with parchment.
Combine popcorn and peanuts on a baking sheet.

2.  Mix brown sugar, butter, and corn syrup in a small pan.  (or substitute)
Bring to boil over medium heat.
Boil without stirring for 4 minutes.
Remove from heat
Stir in baking soda.
Quickly pour caramel over popcorn and peanuts.
Toss with 2 rubber spatulas.
Bake for 20 minutes - stirring twice.

3.  Place chocolate chops in a small microwave safe bowl.  Sugarfree chocolate. 
Microwave on medium heat in 10 second bursts stirring until almost melted.
Stir in the cayenne and cinnamon.
Transfer to a Ziploc bag - cut a small hole in a corner and drizzle on popcorn.
Let set 4 hours.
Break into pieces.

**Corn syrup can be substituted for with:
"Brown rice syrup, also known as bran rice syrup can be used as a substitute for corn syrup, although it can be difficult to find. It contains more complex sugars than corn syrup which provide less of a spike in blood sugar, and so are better for you.
Corn syrup can also be substituted by maple flavored syrup (which is often simply corn syrup with flavoring), golden syrup, agave nectar or light molasses."
